Rotisserie Chicken and Potatoes

This recipe creates a perfectly seasoned, tender whole chicken with flavorful roasted potatoes and onions, all prepared in a pressure cooker for efficiency and convenience. Begin by combining salt, garlic powder, smoked paprika, black pepper, and onion powder in a small bowl to create a spice rub. Pat the chicken dry with paper towels, then generously coat it with the spice mixture, ensuring the seasoning covers the entire bird for maximum flavor penetration.

Place a rack inside the cooking pot and pour in the chicken broth. Position the seasoned chicken on the rack with the breast side facing up, then secure the lid of your pressure cooker. Set the cooking program to high pressure for 27 minutes, ensuring the steam release valve is sealed. Once the cooking cycle completes, allow a natural pressure release for 10 minutes before manually releasing any remaining pressure.

For an optional crispy skin, lightly coat the chicken with nonstick cooking spray, place the crisping lid on the cooker, and set the heat to high for an additional 10 minutes. Carefully transfer the chicken to a cutting board and cover loosely with foil to rest while retaining its juices. Reserve approximately three-quarters of a cup of the cooking liquid for later use, discarding any remaining liquid in the pot.

Wipe the cooking pot clean and select the sauté function. Add olive oil and butter, heating until the butter melts. Introduce the baby potatoes and cook for about five minutes, stirring occasionally until the potatoes begin to take on a golden color. Then, add the red onion wedges, dried rosemary, and the remaining salt, garlic powder, and black pepper. Cook for an additional minute to allow the onions and herbs to release their aroma. Pour in the reserved cooking liquid and secure the lid again. Set the pressure cooker to high for five minutes to finish cooking the vegetables. After the cycle, quickly release the pressure and stir in chopped fresh parsley for a pop of color and freshness.

Carve the chicken and serve it alongside the seasoned potatoes and onions. The result is a complete meal with juicy, tender chicken and perfectly cooked vegetables, all infused with the combined flavors of aromatic spices, fresh herbs, and savory broth.
