Raspberry Croissant Puddings Slow Cooker Recipe

This luxurious version of bread pudding transforms ordinary croissants into an elegant dessert that is both decadent and visually appealing. To begin, tear the croissants into bite-sized pieces and arrange them in individual jars or ramekins, layering them with fresh raspberries for bursts of tart sweetness. Gently press down each layer as you build your dessert, filling each container about three-quarters full to allow room for the custard to soak in.

In a separate bowl, prepare the custard by whisking together eggs with golden caster sugar until smooth. Gradually add whole milk and double cream, then fold in freshly grated orange zest and a splash of vanilla extract. Whisk thoroughly until the mixture is fully combined, creating a rich, aromatic custard that will soak into the croissants and raspberries, giving the pudding a soft and creamy interior. Pour a portion of this custard over the croissant layers in each jar, allowing it to settle before adding more until the croissants and fruit are just covered. Let the jars sit for a few minutes to allow the custard to absorb into the bread.

While the pudding is resting, prepare the crunchy almond topping. Place flaked almonds in a frying pan over low heat and toast them gently until they begin to develop color and a fragrant aroma. Sprinkle in sugar and continue to stir until the sugar melts and coats the almonds evenly. Once the almonds are caramelized, remove them from the heat and allow them to cool on parchment paper, forming a crisp, sweet topping that will contrast beautifully with the soft custard.

To cook the puddings, pour warm water into the base of a slow cooker and carefully place the jars inside, creating a gentle water bath that ensures even cooking. Cover the jars with a clean towel to prevent condensation from dripping onto the puddings and then close the lid. Cook on high for about an hour, or until the puddings have puffed up slightly and the custard is fully set.

Once cooked, remove the jars carefully and serve the puddings warm. Garnish each portion with a scoop of vanilla ice cream, a light dusting of icing sugar, and a sprinkling of the caramelized almonds. The combination of the soft, custardy croissant, the tart raspberries, and the crunchy sweet almonds creates a refined dessert that is both indulgent and satisfying, perfect for entertaining or treating yourself to something special. This elegant bread pudding elevates a classic comfort dessert into a show-stopping dish with contrasting textures and vibrant flavors.
